Kanya’s Kitchen

My sister is one of the most beautiful people I know – on the inside and the outside. My whole life, I remember watching her, amazed by the things she could do with such ease – from coloring in the lines when we were 4 and 7 to whipping up a quick, healthy meal for family and friends even when we had arrived at her door unexpectedly. I’ve asked Kanya to share some of her tips and tricks with us over the coming months and she graciously agreed!

 

 

Dear Maya,

Here’s what I made for dinner tonight when I didn’t feel like cooking, so quick and easy and all done with ingredients that can be kept in the pantry, fridge or freezer.

Kanya’s Balsamic tomato roast chicken

4 chicken breast

1 can whole peeled tomatoes drained and quartered

2 tabs salted capers

1/4 cup balsamic vinegar

1 tab olive oil

2 tabs brown sugar

Basil leaves for garnish

Preheat oven to 400 F. Combine the tomatoes, capers, balsamic, oil and sugar and spread over the chicken breast in a baking dish. Bake for 20-25 minutes or until chicken is cooked thoroughly. Sprinkle with basil leaves and serve with a salad.
